Eggplant Caviar
n
A thick, pureed mixture of roasted eggplant, tomato, onion, olive oil and various seasonings. It's served cold or at room temperature as a dip or spread.
As mentioned in DEFINITION: Eggplant, eggplant is not an egg. In this case the name is doubly deceitful since caviar generally refers to fish eggs. Despite the double reference to eggs, there are no eggs in it.
